A dish to share with the family - Made in Gers #4
Ingredients for 4 persons :
4 thighs of Gers free-range chicken (or 1 cut-up chicken)
30 cl of blond beer from the Brasserie de la Ferme en Scène, in Valence-sur-Baïse
1 tablespoon of honey (ideal: acacia), from Abeilles d’Isabelle, in Condom
zest of a lemon
2 onions
1 bay leaf
2 tablespoons of flour
olive oil
salt and pepper
Achievement
Remove the skin from the chicken thighs (but keep them aside). Slice the onions
In a casserole dish or frying pan, heat 1 teaspoon of olive oil then brown the chicken skins well.
Remove the skins then add the thighs. Brown on all sides
Remove the thighs and reserve them. Add the onions then sauté them until translucent.
Return the chicken and sprinkle with flour. Brown for another 2 mins
Add the beer, bring to the boil for 1 minute then reduce the heat. Then add the honey, lemon zest and bay leaf to the sauce
Close the casserole dish and cook over low heat for 45 minutes to 1 hour.
At the end of this time, open. Salt and pepper to taste
